Skinny White Bean Chicken Chili Recipe
This white bean chicken chili recipe is my GO TO for family gatherings and large events. It's delicious, healthy, and you probably have most of the ingredients already in your pantry! You CAN make this with fresh food….and it does taste even better….but the ease of opening 7 cans and throwing in some spices wins out on busy nights.
I'm guessing I'm not alone in the “I need a quick meal my family will eat, and I need it NOW” camp. This is our number one recipe and has been for years. If there's a recipe on this site, you know it's going to be EASY! And what I love most is you can dress it up worthy of a dinner party like my Christmas Cookie Exchange Party or keep it simple for your family.
Chicken Chili Ingredients
White Bean Chicken Chili Recipe:
- 32 oz chicken broth
- 12.5 oz canned chicken breast {“Costco chicken”}
- 15 oz can Great Northern Beans, drained and rinsed
- 14.5 oz can Diced Fire Roasted Tomatoes
- 15 oz can corn, including liquid
- 7 oz can MILD Diced Green Chilies
- 16 oz jar La Victoria MILD Salsa Verde
- 2 TB dehydrated onion
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp dried oregano
- Salt and pepper to taste
White Bean Chicken Chili Directions
Open all containers and throw them in a pot! {If you have trouble with a can opener please watch the video below….} Let simmer for a 2-3 hours. I've never made this in my slow cooker but this might be a great option for all day simmering. It's definitely better the next day. Adjust as desired for your personal taste. Heat it up by replacing items marked MILD with something a little spicier. *Note for mothers with small children….the Herdez MILD salsa ended up being too spicy for my kids. The La Victoria is just fine.
Fresh Ingredient Alternatives:
- Sub 1 medium onion diced and sautéed for dehydrated onion
- Sub 2 ears cooked or roasted corn for canned corn
- Sub 1 1/2 cups shredded rotisserie chicken for canned chicken
- If you like making your own chicken stock…..knock yourself out!
Serve It Up
Serve it up with plain yogurt, then top with avocado chunks and shredded cheese for the ultimate in delicious pantry dinners! We love to have it with Bob's Red Mill Cornbread but tortilla strips are great too. Although this skinny white bean chicken chili is delicious all by itself.
