Skinny White Bean Chicken Chili Recipe

This white bean chicken chili recipe is my GO TO for family gatherings and large events. It's delicious, healthy, and you probably have most of the ingredients already in your pantry! You CAN make this with fresh food….and it does taste even better….but the ease of opening 7 cans and throwing in some spices wins out on busy nights.

I'm guessing I'm not alone in the “I need a quick meal my family will eat, and I need it NOW” camp. This is our number one recipe and has been for years. If there's a recipe on this site, you know it's going to be EASY! And what I love most is you can dress it up worthy of a dinner party like my Christmas Cookie Exchange Party or keep it simple for your family.

  • 12.5 oz canned chicken breast {“Costco chicken”}
  • 15 oz can Great Northern Beans, drained and rinsed
  • 14.5 oz can Diced Fire Roasted Tomatoes
  • 15 oz can corn, including liquid
  • 7 oz can MILD Diced Green Chilies

  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp dried oregano
  • Salt and pepper to taste

White Bean Chicken Chili Directions

Chili in a bowl with can opener for white bean chicken chili recipe

Open all containers and throw them in a pot! {If you have trouble with a can opener please watch the video below….} Let simmer for a 2-3 hours. I've never made this in my slow cooker but this might be a great option for all day simmering. It's definitely better the next day. Adjust as desired for your personal taste. Heat it up by replacing items marked MILD with something a little spicier. *Note for mothers with small children….the Herdez MILD salsa ended up being too spicy for my kids. The La Victoria is just fine.

Fresh Ingredient Alternatives:

  • Sub 1 medium onion diced and sautéed for dehydrated onion
  • Sub 2 ears cooked or roasted corn for canned corn
  • Sub 1 1/2 cups shredded rotisserie chicken for canned chicken
  • If you like making your own chicken stock…..knock yourself out!

Serve It Up

Serve it up with plain yogurt, then top with avocado chunks and shredded cheese for the ultimate in delicious pantry dinners! We love to have it with Bob's Red Mill Cornbread but tortilla strips are great too. Although this skinny white bean chicken chili is delicious all by itself.

Public Service- How to Use a Can Opener for Millennials

You may have heard all the hype from the Tuna companies speculating that the declining tuna sales are due to Millennials not owning a can opener, even to the point of claiming they don't know how to use a can opener. Out of curiosity Jimmy Kimmel set out on the streets to test the theory….and they mostly failed. So as a public service you can learn once and for all how to use a hand held can opener. Millennials….are you willing to take the challenge? Will you comment below whether you already knew or just learned how to use a can opener? Let's prove Jimmy Kimmel wrong and make a batch of this White bean chicken chili for your friends!

So are you up for the challenge? If you make this recipe take a photo and send it in! This is such an awesome recipe that you can dress up or down depending on your meal. #canopenerchallenge

This looks so good! We love chili around here, but I tend to lament how heavy it is. Definitely going to give this one a try soon.

I’m needing some lightened up version of recipes after all those Christmas cookies! This recipe not only looks delicious but also easy for a weeknight meal. I love hot soups during the winter, and the cornbread looks perfect alongside the soup. Thanks!
