Baked Avocado Healthy Fiesta Recipe
If you've never tried a baked avocado you are missing out! These little boats of goodness are delicious AND they are full of healthy fats and protein. So I will go as far to say that they are the tastiest healthy food you'll ever encounter! Plus they are keto friendly.
Mexican Baked Avocado
Did you know that Mexico is the largest avocado producer in the world!? By like, A LOT. So serving avocados at a fiesta or Cinco de Mayo celebration is totally legit. We most often see our delicious friend in guacamole but today we are going to try something new.
Prepare Your Avocados
The easiest way to get the pit from an avocado is with a sharp serrated knife. Press down on the pit until the knife is lodged, then gently twist.
Now that the pits are removed, use a spoon to remove a little more avocado fruit and increase the size of the “bowl”. But toss that extra avocado into a bowl cause that'll be the binder in your filling.
Prepare Baked Avocado Filling
After you smash the avocado well, mix together the rest of the filling ingredients: a lovely combination of shredded chicken, chopped tomatoes, Monterrey Jack cheese, cilantro, cumin, and chili powder.
Stuff the Avocados
Using your spoon carefully place 1/3 cup of filling mixture into each avocado half, leaving it nice and rounded at the top.
Bake your avocados in the oven for 15-20 minutes until the cheese is melty. Then top with a little more cheese {if desired}, cilantro, and a lime yogurt drizzle. If you want to get crazy, add some sriracha to the yogurt sauce for a little extra kick.
Serve Your Baked Avocados
Our Mexican dinner party was a success and these baked avocados were a hit! You can dress this delicious recipe down for any night of the week or dress it up for your next fiesta. Either way, I think you'll love them as much as we do!
