Baked Avocado Healthy Fiesta Recipe

If you've never tried a baked avocado you are missing out! These little boats of goodness are delicious AND they are full of healthy fats and protein. So I will go as far to say that they are the tastiest healthy food you'll ever encounter! Plus they are keto friendly.

Mexican Baked Avocado

Avocados cut in half on counter

Did you know that Mexico is the largest avocado producer in the world!? By like, A LOT. So serving avocados at a fiesta or Cinco de Mayo celebration is totally legit. We most often see our delicious friend in guacamole but today we are going to try something new.

Prepare Your Avocados

Remove an avocado pit with knife

The easiest way to get the pit from an avocado is with a sharp serrated knife. Press down on the pit until the knife is lodged, then gently twist.

Avocado halves with extra large scoops for filling

Now that the pits are removed, use a spoon to remove a little more avocado fruit and increase the size of the “bowl”. But toss that extra avocado into a bowl cause that'll be the binder in your filling.

Prepare Baked Avocado Filling

Shredded chicken, cheese, tomato, and cilantro filling

After you smash the avocado well, mix together the rest of the filling ingredients: a lovely combination of shredded chicken, chopped tomatoes, Monterrey Jack cheese, cilantro, cumin, and chili powder.

Stuff the Avocados

Using your spoon carefully place 1/3 cup of filling mixture into each avocado half, leaving it nice and rounded at the top.

Bake your avocados in the oven for 15-20 minutes until the cheese is melty. Then top with a little more cheese {if desired}, cilantro, and a lime yogurt drizzle. If you want to get crazy, add some sriracha to the yogurt sauce for a little extra kick.

Serve Your Baked Avocados

Explore Mexico From Home

I have been fortunate enough to travel to 28 countries and counting. Exploring the world, learning about other people, food, and cultures gives me so much joy. Through my travel experiences my heart has grown with more compassion and empathy toward humankind.

In an effort to instill this kind of cultural appreciation and understanding in our children, we've been virtually traveling around the world for years. Someday I hope to have these adventures with my family in person, on location. Until then, these lessons have been a wonderful primer I hope will only deepen their appreciation of each culture, if and when we do arrive.

In an effort to help more families enjoy these adventures, we've gathered up our favorite videos, books, recipes, crafts, and activities from each country to share them with YOU.

I hope your family will come to enjoy your virtual travel adventures through these magic doorways into other lands as much as we have.
