Thanksgiving Leftover Turkey Soup with Noodles

- 1 stalk Celery sliced
- 1/2 Onion diced
- 1/2 cup Sliced mushrooms
- 1/2 cup Green beans - sautéed or casserole leftovers
- 1 Tb Butter Sub coconut oil for dairy free
- 1/2 tsp Poultry seasoning
- 1 tsp Dried rosemary
- 2 cups Cooked turkey Cooled and cubed
- 1 cup Potato leftovers - baked or scalloped not mashed
- 32 oz Chicken Stock
- 4 oz Homestyle egg noodles
- 2 tsp Better Than Bouillon Vegetable Base
- 1/2 tsp Oak Smoke Salt Flakes
- Scoop of cranberry sauce garnish optional
Slice and dice all vegetables.
Sauté all veggies in butter, coconut oil, or non-dairy butter alternative until onions are translucent.
Add spices and sauté for a few minutes to bring out the flavor.
Add the cubed turkey, chicken stock, potatoes, and bouillon
Drop in your noodles and let simmer according to the time on package, approximately 12 minutes, or until soft.
Season with oak smoked salt flakes and top with whole cranberry sauce.
