Potato Corn Chowder

A hearty chowder from your favorite holiday leftovers. Turn your scalloped potatoes, ham, turkey, or salmon into a delicious dinner.

  • 2-3 cups Leftover scalloped potatoes
  • 3 cups 2% milk or chicken stock
  • 1 can Corn
  • 1-2 cups Leftover protein of choice: ham, chicken, turkey, or salmon
  • 1 tsp Rosemary
  • Seasoning salt to taste


  • Add potatoes, milk, corn, and cubed meat to a pot
  • Let simmer til warmed through
  • Add spices as desired
  • Top with shredded sharp cheddar cheese and serve with fresh soda bread


If you start with food that's ALREADY made you're in for an easy chowder for dinner! If you don't have leftover scallop potatoes you can use sliced baked potatoes, cream, and cheese to create the chowder base.
