Pumpkin Pasties Easy Recipe for Delightful Harry Potter Snack
This pumpkin pasties easy recipe will have you eating these delightful Harry Potter snacks in less than an hour! If you start with pre-made crust the rest is a piece of cake…..or pie, as it were! You of course, can make your own crust, but when it comes to party food, time is usually of the essence.

Easy Pumpkin Pasties Ingredients
Simple supplies
- Baking sheet
- Silicone baking liner {I swear by these! Makes clean up SO easy!}
- Rolling Pin
- 4″ round cutter
Yummy Ingredients
- Pre-made Pie Crust {Or your own homemade recipe if you wish} Ironically, I found that I liked the generic Kroger brand crust better than some of the brand name options. Test them out and let me know which one you like best.
- Canned pumpkin {Or your own baked pumpkin if desired}
- Sugar {Sub maple syrup, agave, or coconut sugar}
- Allspice
- Cardamom
- Cinnamon
- Cloves
- Ginger
- Nutmeg
- Egg Yolk for wash
How to Make Pumpkin Pasties
Roll your pastry crust onto parchment paper. The store bought crusts aren't sticky and I haven't needed any flour.
Using a 4″ cookie cutter, glass, or small bowl cut 5 circles from each crust, then press scraps together and roll out again. You will be able to get 5 more circles from the remainder for a total of 15.
See. Wasn't that easy?
Mix Pumpkin Pasties Easy Filling
Now mix up your pumpkin, sweetener of choice, and spices and stir well. If using canned pumpkin puree this won't take more than a few minutes.
Fill Pumpkin Handpies
This next step, the filling and crimping takes the longest of the whole thing! Add 1-1/2 tablespoons of filling to the center of each pastry circle. Pie crust is not my favorite thing so I err on the side of more filling. However, if you fold the crust over and the filling is pressed out during crimping, you are using a little too much.
Crimp Pumpkin Pasties Edges
After filling each one I use a fork to crimp down the edges all around the outside crescent. You want to make sure the two layers of crust are secure so it doesn't leak while baking. Continue filling and crimping each one.
When finished place your pumpkin pasties onto a silicone lined baking sheet. If you make 15 pumpkin pasties that are 4″ each you can fit all of them onto a single sheet like so. {see image above}
Add Lightning Bolt from Harry Potter
Now we'd be ready to bake at this point but all great pastry chefs say you need to give the pie a slit in order to release steam so as not to pop your carefully crimped seams. So why not go with a Harry Potter lightning bolt scar to remind everyone what we're making these for!?
Egg Wash and Bake Pumpkin Pasties
After your lightning bolts are cut with a very sharp knife, mix up an egg yolk with a little water and brush over each pumpkin handpie. The egg wash will help it brown and give it a nice shiny appearance for serving.
This is them after baking. Don't they just look delicious!? Spoiler alert……they ARE!
Serve up Easy Pumpkin Pasties
After baking, you can serve them up immediately. Although I recommend you let them cool a bit or you'll have kids that burn their mouths. {Trust me!}
But they can be stored for up to 2 days and still retain their deliciousness, although the crust will soften over time. Although I've never had them last longer than a day except for some extras I hid.
I mean look at these pumpkin pasties! Tell me you aren't craving one right now! They are so good they've quickly become a family favorite. And since they're also really easy, I'm happy to oblige.
Easy Pumpkin Pasties Recipe and Hot Butterbeer
This pumpkin pasties easy recipe is never more appropriate than to celebrate Harry Potter's birthday on July 31st, or at Halloween with a Harry Potter theme. Or a Hogwarts themed birthday party. Or every day of Fall. Or really just any time you have a hankering for some delightful pumpkiny goodness!

Equipment
- Baking sheet
- Silicone Pan liner
- Rolling Pin
- 4" Round Cutter
Ingredients
- 1 box Premade pie crust, or homemade if you've got time 2 crusts
- 1 cup Pumpkin puree
- 2 Tb Granulated Sugar Sub Maple Syrup or Agave
- 1 tsp Ground Cinnamon
- Pinch Ground Allspice
- Pinch Ground Cardamom
- Pinch Ground Cloves
- Pinch Ground Ginger
- Pinch Ground Nutmeg
- 1 Egg Yolk – whisked with 1 tsp water for basting
Instructions
- Preheat oven to 375°
- Roll out pie crust and cut 4" circles. Each crust will make 5 hand pies.
- Combine and roll out the scraps to yield 5 additional crusts.
- Mix pumpkin, sugar, and spices until combined
- Spoon 1 Tb filling into the center of each circle. I typically add as much as they will hold before starting to overflow!
- Fold circle over and crimp edges with a fork until sealed. If filling squeezes out you've used a little too much.
- Place on lined baking sheet and use sharp knife to cut a lightning bolt shaped vent on the top of each one.
- Mix one egg yolk and water to create a wash and baste the tops of each pasty.
- Bake at 375° for 15 minutes or pumpkin pasties are golden brown
- Serve with Butterbeer and enjoy!
