Peach Sugar Cookie Tart Recipe
These are the yummiest, most elegant looking cookie that isn't made by a professional! Using, are you ready for this? Store bought sugar cookies. {gasp!} It takes less than 20 minutes to put together a few dozen of these beauties for an event. We served them at a “Sweet Little Peach” Baby Shower and they were a hit! The combination of the creamy frosting with the tart fruit is just heaven. These Peach Sugar Cookie Tarts are perfect fall harvest treats. Leave it to me to give you a recipe that's hardly a recipe but I'm gonna keep it real! I do NOT have time to be baking up a storm before an event. That's just not my thing. If you ARE a baker, {slightly jealous} then by all means, make your own sugar cookies from scratch. I'm sure they will taste all the better. But if you have a favorite store-bought bakery brand, then I say go for it!! We got ours at the Walmart Bakery. {double gasp! Who knew?} Just make sure they are fresh and soft. You don't even have to tell anyone how easy it was. It'll be our little secret!

4 Ingredients!
I'm serious. These are such beautiful cookies that could NOT be any easier.
- Sugar cookies
- Cream cheese frosting
- Peaches or Nectarines
- Apricot Preserves
Step 1: Frosting
Frost those babies! If you are strapped for time, like I was this day, go ahead and use store bought cream cheese frosting. However, if you do have time I HIGHLY recommend making it from scratch {recipe below} as the cookies will taste SO much better. It adds on a few extra minutes to the prep but it's worth it.
Step 2: Slice and Dry
Wash and slice your stone fruit. I know the title is for “Peach tarts”, but I chose nectarines. The skin makes them so much prettier! Plus “Nectarine Tart” doesn't quite have the same ring to it! You also use peaches, or even plums.
Now, you need to dry off the slices. This is technically another step but if you lay your fruit slice directly onto a paper towel then it happens automatically. I did NOT do that and you can see what happened to my juicy fruit. Exhibit A {above} slid right off the cookie! Lesson learned and now you know the secret too!
Step 3: Arrange Fruit
You want three slices per cookie, although this may vary depending on the size of fruit and diameter of cookie, but I'd never use less than three. Now that the bottoms are dry you can push them into the frosting a bit and they'll be nice and secure! Safety first.
Step 4: Apricot Glaze
Spoon 1/4 cup of apricot preserves into a bowl and stir it up to eliminate clumps. Remove any large chunks of fruit. Use a pastry or basting brush to glaze each piece of fruit with a thin layer of preserves. If you don't have a pastry brush, go ahead and use your finger! I won't tell a soul!

Now that they're done, try not to eat them all before you display them beautifully on the food table. You'll want to hear your guests rave about how amazing they are, I promise! In fact, they are so yummy I made them again for a Farmer's Market Brunch just a few days ago, and they were a hit. I mean, who doesn't think a cookie makes a delicious breakfast!? Just kidding. You know I'm all about healthy eating but it IS ok to have a treat once in a while!
