Start creating your individual parfaits in small bowls/containers. If you make them too large, much of it will be wasted. Line the bottom of the bowl with your favorite berries: strawberry, raspberry, blueberry, etc. Bananas are great but don't hold up well so if you do add bananas, add them right before serving. Top with your favorite high protein Greek yogurt. My kids love Greek Gods Honey Vanilla. It's super creamy and delicious. You can spoon the yogurt or use a ziploc bag with the corner snipped to pipe it into each bowl. It makes for a cleaner presentation if you pipe it in.

Mermaid Yogurt Parfait Toppings

Once the base parfait is created, offer guests a few topping options. I added all natural food coloring in a couple colors to additional yogurt and added it to silicone shell molds for freezing. These little shell “popsicles” were a big hit.

Next for toppings, offer up some crushed graham cracker for “sand” and “starfish” cereal. This Truly Fruity Sea Stars Cereal is gluten-free and has a fun fruit flavor without a ton of added sugar. {not sponsored} Then top each bowl with a mermaid tail food pick, and display them beautifully. {I LOVE my sparkly candelabra cupcake stand and use it ALL the time. • Star cereal like Truly Fruity Sea Stars Cereal

Mermaid Party Food – “Sand”wiches

Sand-wiches are a great way to fill up little tummies at a Mermaid birthday party. Give them a little peanut butter {depending on allergies} and turkey or ham for additional protein. Starfish PBJ's are super easy. Simply make your PBJ sandwich and use the star cookie cutter to cut the star. Then layer them on a serving tray. Cover with a moist paper towel until it's time to serve so the bread doesn't dry out. Turkey and Cheese Crab-wiches are also easy but take the extra step of adding eyeballs. The large croissants are a must. Add mayo and mustard as desired then layer with cheddar cheese and deli lunch meat of choice. Cut each coffee stir stick in half, then affix the large candy eyeballs to the top of each stir stick with royal icing if you think guests will eat them. Or glue if you think they won't. Once dry and set, add each eyeball to the croissants to create your crab-wiches. Mermaid Sandwich Ingredients:

• Peanut butter and jelly sandwiches as desired

• Large star cookie cutter

• Croissants

• Turkey and cheddar

• 5″ Coffee stir sticks – cut in half

• Large candy eyes

• Thick frosting “glue”

• Tiered glass tray – similar square tray

• Mermaid food labels

Mermaid Food – Coral Reef Veggie Tray

After your sandwiches are ready, add some veggies. This coral reef veggie tray is simple piece of food art nestled in a bowl of ranch dressing mixed with cream cheese to create a solid base. You can read “Creative Under the Sea Veggie Tray” for a step by step recipe.

Now fill in the rest of your food table with these Mermaid party snack ideas. Like these Sea Salt Veggie Chips which have a little more nutrients than regular potato chips.

…and roasted salted seaweed sheets. You can pick them up at Costco sometimes, or in nicer grocery stores with an expanded Asian food section. My kids love the seaweed sheets but wasn't sure what the other guests would think, but was very surprised to see how many of the girls tried it and enjoyed it. So don't be afraid to introduce something new to younger palates!

Our final snack is the classic goldfish cracker, only try the baked Parmesan flavor to keep with the color scheme. 😉

Mermaid Sweet Treats

As soon as we decided on a mermaid birthday party theme, I knew I had to create these clam shell cookies. Based on the shape they really should be called oyster cookies. BUT, both mollusks have the ability to grow pearls, so it's a draw. {Did you know that BTW!? I think that's pretty cool}. Mermaid Punch

Quench your mermaid thirst with plenty of water, but also fun punch. The aqua colored Hawaiian Punch “Polar Blast” makes the perfect “Ocean Water” straight out of the bottle. But, mix it in a 1:1 ratio with Sprite and you've got the perfect mermaid punch! Ocean Water Drink Options:

• Hawaiian Punch “Polar Blast” mixed 1:1 with Sprite

• Gatorade Frost “Glacier Freeze”

• Calypso “Ocean Blue” Lemonade

• Sprite with pumps of Torani Coconut syrup and Torani Blue Raspberry syrup

Mermaid Birthday Cake

I saw an image of a darling little mermaid cake from my favorite cake artist, Salt Cake City. So I reached out to see if she could make it in my party colors with a few little tweaks, which of course, she could. I LOVE when a cake tastes as good as it looks and I've never been disappointed by Salt Cake City.

We went with the mermaid tail topper that matches our mermaid tail soap party favor. And the same shells I used to create the yogurt popsicles. Just make sure your baker adds a little shimmer to the details for the finishing touch!
