Simple Christmas Veggie Tray Ingredients
Choose your favorite veggies for this healthy Christmas tray, then finish it off with some black olive Elf shoes and a red pepper feather!
Green Veggies:
- Broccoli
- Sugar Snap Peas
- Celery
- Cucumber
- Green Bell Peppers
- Asparagus
- Artichoke hearts
Yellow Veggies:
- Yellow Bell Peppers
- Yellow Tomatoes
- Corn
- Squash {cooked}
- Golden Beets {cooked}
Optional Charcuterie Snowflakes:
- Summer Sausage
- Cheddar Cheese Slices
Christmas Veggie Tray Instructions
Step 1: You'll want to cut the broccoli {or green veggie of choice} in smaller pieces to allow you to make clean lines for the top of your hat. **Make sure you have a tray large enough and start with a small triangle.
Step 2: Arrange a line of yellow pepper {or yellow veggie of choice}. I like using the peppers because you can cut them into straight lines.
Step 3: Create another line under that one with green veggies. The snap peas work well here for the linear shape.
Step 4: Create a final green strip with a stalk of celery cut and kept in a line, allowing another straight edge.
Step 5: Cut your yellow tomatoes in half and arrange 2 columns for one leg and 2 columns for another leg equally spaced from the edges. Then top your legs with a third column of full tomatoes to cover the seams in the middle of each.
Step 6: Slice black olives in half and arrange into pointed shoes. You will need to trim the olives down as each shoe reaches the point in order to keep the shape.

A red pepper makes the perfect feather! Use a small paring knife to create a long teardrop shape. Then carefully slice angles into each side to create the feather look.

If you're looking for more than veggies, add some meat and cheese to your Buddy the Elf Veggie Tray. Using thick deli sliced lunchmeat or summer sausage rounds and your favorite sliced cheese, create snowflakes using different sized cookie cutters.
